It is a very popular dish among the locals aswell among tourists. The ingredients do vary from region to region. Usally a “sancocho” soup does include the following: chicken, plantains, yucca, fresh cilantro, onions, carrots, garlic, cumin, corn, salt, a little pepper and potatoes.  If a family wants to welcome you they usually will serve you first a nice warm portion of this traditional Colombian soup. Of course each family has it`s own version of a “Sancocho” soup.
In the carribean region they prefer to use fresh fish or sea food. In the andean mountains it’s often made with wild animals. The soup is naturally gluten-free.  Miami for example, which has one of the fastest growing Colombian populations in the US and an equally fast-growing Colombian food scene. In Miami you probably will find Colombian restaurants serving this dish.
